Roma restaurant affected by boil water notice

The state's environmental safety agency is in Roma to evaluate the city’s water plant following a March 15 boil water notice.

The notice has not stopped Rosie Muñoz from opening the doors to Rancho Café in Roma. Muñoz said her café has been open for 48 years, and she's doing what she can during the second week of the boil water notice.

“[We’re] boiling the water, having bottled water so that our customers have water that they can be drinking,” Muñoz said, adding that she stocks up the fridge with water every night to use the following day. 

The Texas Commission on Environmental Quality ordered Roma to issue the boil notice because they hadn't reported certain water readings for three months.

The agency found that the water in Roma has had high levels of turbidity — or cloudy water — since August 2023.

Representatives with the city of Roma said they're expecting a report from TCEQ by Friday, March 29. 

Until the state finishes their tests, residents and restaurants will still have to boil their water before drinking it or using it to wash. 

Muñoz said boiling water isn't an option for everything she sells.

“We're not using our fountain drinks, the fountain is connected to the city water so we're only selling canned and bottled sodas,” Muñoz said.

Muñoz said she hasn't noticed a significant loss in sales, and she's willing to take extra steps to keep her doors open until things are back to normal.

“We just want to have our customers healthy, we don't want any of them sick,” Muñoz said.
